Beer bread and scary movies
Yesterday it was a rainy day outside, one of those mucky fall days where you just want to stay inside and curl up with the dogs and a bowl of something comforting, watch a movie, and scare the hell out of yourself.
You know... one of those days.
I find it sort of strange that when I was little, scary movies didn't frighten me at all. But as adult, it doesn't take that much for me to spook myself. Yet, I still curl up with Douglas many a night and we both get scared.
In the morning before chores I threw a pork roast into the crock pot with a bottle of lager, about 4 cups of apple cider, a couple of chopped apples, carrots, and potatoes... then seasoned it up with garlic, thyme, salt, and pepper. I let that cook away all day.
Come evening, the fire was roaring and I made up some Beer bread to go along with our pork roast. It just fit perfectly. Right now, Jalapenos are my favorite thing in the whole world. I try to go easy on them because Kevin doesn't appreciate them as much as I do, but I could eat them in everything, everyday.
Mini Jalapeno and cheddar Beer bread loaves
3 cups All purpose flour
3 tsp baking powder
1 tsp salt
1/4 cup sugar
1/4 cup (or more or less) pickled Jalapenos, chopped
1 cup sharp cheddar cheese - you could use milk but it's so much better with a nice sharp cheddar, it really stands up to the beer, and works well in this bread
1 bottle or can of beer, about 12 fluid ounces
1/2 cup melted butter

Preheat your oven to 375 degrees F.
Mix all your dry stuff together.
Then add your beer. I recommend tasting the beer first, just to make sure it hasn't gone bad or something... I mean really you never know.
Don't taste it too much though, you need pretty much that whole bottle, so control yourself.
Then add your melted butter and mix everything up.
Put your mixture into your greased pan - I used a mini loaf pan. You could use a muffin pan or a loaf pan and just adjust the cooking times. For a loaf the bread would take about an hour. If you use a mini loaf pan, or a muffin pan, these will take about 25 minutes. Test to see if they are done by sticking a toothpick in the center...if it comes out clean they are ready.
These guys are way too tasty, with soup, stew, or just by themselves.
After the bread was done, I served up dinner and we went back to watching scary movies...
Douglas was distracted by the pork and forgot all about the movie.

Then we watched the season premier of the Walking dead. Lots of fun, except that they leave all the excitement for the last minute. One thing that does not scare me is Zombies. I'll say that. However, it's still fun to watch.
Zombie goats, now THAT would scare me.
