French chicken stew
It's another rainy day here, typical November weather. It's suppose to get colder on the weekend.
Today we just worked inside mostly. The animals stayed inside the barn where it was dry and I cleaned the chicken coop. Kevin worked in his shop getting things organized and I went through all our clothes to change from summer to winter.
This simple French chicken stew recipe is perfect for a wet, damp, and, cold day.
Toss in a pot:
2 cups sliced fresh mushrooms (your choice) I used Shiitake
1 can diced tomatoes
1 cup of diced carrot
1 cup diced potatoes
1 cup chicken broth
1 cup chopped onion
1/2 cup green beans
1/2 cup white wine or chicken stock
2 tablespoons quick cooking tapioca
1 tsp dried Italian seasoning
3/4 tsp thyme
1/4 tsp black pepper
Boneless skinless chicken breast, diced
1/2 tsp seasoned salt
1 jar tomato sauce or 1 jar of Alfredo sauce
Cook on medium - low for 2-3 hours.
Serve with fresh bread.
It's delicious and guaranteed to warm you up.
